Sorry Jack!

I couldn't let that jack-o-lantern go to waste. Actually, it was just a pumpkin anyway, since I didn't carve it up. Rather than waste it, I carved, scraped, chopped, and roasted. Ended up with some yummy pumpkin risotto and today some pumpkin chicken chili. Did I mention that pumpkin is full of cancer-fighting beta carotene? Yup. Sorry Jack, you had to go at such a young age, but just know that you'll help me live longer!

Just remember, anything you can do with pumpkin or squash puree, you can do with your leftover Halloween pumpkin. Not only will you save money by not wasting the pumpkin, but you'll benefit from the nutrition of fresh rather than canned. Oh, and it tastes way better too. You can even make it into pumpkin pie! I have another on my front step. I think I'll roast it and save it for Thanksgiving.
