I think I'm in a rut again. . . Scale hasn't changed. Not eating bad, but not being super good either. I guess my downfall has been chips and crackers. They've been low-fat but I know I should avoid them altogether. Tonight I made a simple, healthy pizza:
Beet, Mushroom, and Goat Cheese Pizza with Fresh Sage (for one)
1 Boboli pizza crust
1 thinly sliced beet
hand full of fresh sage
1 fresh Rosemary sprig
2 slices thinly-sliced red onion
1/4 cup fresh sliced mushrooms
2 Tbs. crumbled goat cheese
1 Tbs. olive oil
Salt and Pepper to taste
Place sliced beets in circular pattern on crust, top with mushrooms, sage, Rosemary, onion, and goat cheese. Drizzle with oil. Bake at 350 for 30-45 minutes until beets are cooked through.
Tomorrow night, I have to create something for a Pumpkin cook off to raise money for United Way. I will attempt to make something healthy. I will also attempt to kick up my weight loss. I need to work it! Maybe I need a few one-on-one sessions with the hot instructor! Hmmm. Food for thought.
