Pumpkin cookoff, busy schedules, and the evil scale!

Yeah! I won the "healthy recipe" entry in the pumpkin cook off. My healthy dish was a modified version of a dip I had a few weekends ago at the girls "spa day."
I called it:

Curried Pumpkin and Cream Cheese dip
1 8 oz pkg. reduced-fat cream cheese
3/4 cup pumpkin puree
2 Tbs. Curry powder
About 6 oz. spicy Major Grey or mango chutney

Soften cream cheese and mix with pumpkin, shake curry power on top of pumpkin/cream cheese mixture, top with chutney and bake at 350 until bubbling. Serve with baked pita or tortilla chips.

The other two dishes I made that tied for "next runner-up" were Roasted Pumpkin Risotto and Thai Curry Pumpkin Soup with Shrimp.

The soup I've made before and written about. It's very simple:

1 15 oz can pumpkin
1 15 oz can low-fat chicken stock
1 15 oz. can light coconut milk
1 Tbs. curry
1/2 tsp. each cinnamon and ground cloves
1/4 tsp. nutmeg
2-3 garlic cloves, minced
1 small onion, chopped
2 Tbs. olive oil
1 lb. large shrimp
Salt and Pepper

Saute onion and garlic in olive oil. Add shrimp and saute until pink, add salt and pepper. Place in slow cooker along with remaining ingredients and cook on med-high for 3-4 hours. Top with fresh cilantro. Serve.

The risotto was not really low-fat but I guess it was reduced fat. I'll share the recipe tomorrow. That one was a bit more time-consuming.

So, the Pumpkin cook-off raised $175 for United Way, plus my company matches it, so that's $350! Plus, I won a Williams-Sonoma cook book, knife set, and cutting board.

Didn't make it to the gym, but I am going tomorrow before my day gets crazy! I have the day off, but I have a birthday party for my daughter. I have a lot of running around to do, but will hit the gym before everything else gets in the way. Not liking what the scale is saying. Hopefully, it's just water weight gain, but it said I gained two pounds. Not cool at all! I need start putting me before everyone else's needs, which is what I always tend to do. Sometimes, we just need to say no! I guess I started when I said no to a charity meeting tomorrow. I probably could have done it, but I have so much on my plate tomorrow, and they called at the last minute. I can't do it all!

I will feel much better after an hour or so at the gym. It really is as mental as physical!
