The birthday party

It is really hard to have a four-year-old's birthday party and keep the food healthy, but I managed to do it. Of course, chasing the kids around and picking up after them is excellent exercise!

Of course there was cake (cup cakes for that matter) and ice cream. I got the little cups, so I didn't have to scoop. That way, there's no tasting. Less mess too! There was a little food-fight incident and green icing everywhere, but I guess that's what being four is all about!

For the adults there was strawberry mango salsa, curried cauliflower dip, and peanut butter mocha dip for apples. Those were all Weight Watchers recipes. Then I made this Black bean Butternut Squash Turkey Chili:

1 pound ground turkey
1 chopped onion
3 cloves garlic
1 large can diced tomatoes
2 15 oz. cans black beans
1 pound chopped butternut squash (or sweet potatoes)
1 can diced green chilies
1 cup chicken broth
1 Tbs. curry
1 Tbs. chili powder
1/2 tsp nutmeg
1/2 tsp ground gloves
1 cinnamon stick (remove after cooking)
1 star anise (remove after cooking)

Place all ingredients in a crock pot and cook on med-high 4-5 hours, until squash is tender and turkey is completely cooked. You can top with fat free cheese if you like.

Between all the shopping, cooking, and cleaning, I really got in a good work out over the weekend. I also got in a couple of Jillian's cardio kickboxing workouts. Nothing relaxes you just before a bunch of company like a good cardio workout. Now I'm completely exhausted! Good thing four-year-old birthdays come only once a year!

Well, got an early morning, so it's an early night tonight.
