I refuse to have old lady butt. I'll be walking at the Mall or at work, and I can't help but look at other people's butts. These older women have this flat butt thing going on and it's all flabby. I want to tell them if they just did some squats and lunges, it wouldn't look that way!
My butt is feeling the lunges and squats from yesterday when I was "put on the spot" by Scott, our instructor to add more weight. It killed at the time, but I'm glad I did it. I could definitely feel it today, but I wasn't as sore as I thought. I still went running today, because I'm doing the 5K in three days, and I really don't want to be too sore. It's way too easy to become complacent when no one is driving you. The gym is a good thing, even when you don't feel like it. I always feel so amazing after.
I also enjoyed a nice long walk as part of the United Way campaign kick-off. What a beautiful day for that event. One of the speakers talked about the health benefits of dark chocolate, red wine, and volunteering! OK, I should be pretty healthy because I do all of the above. Especially the last two.
Tomorrow is pot-luck breakfast at work. I know there will be lots of unhealthy stuff like donuts and muffins, so I'm making a very healthy fritatta. . .
Scallop, Leek, and Mushroom Fritatta
1 leek chopped (light part only)
4 oz. sliced fresh mushrooms
1 pound bay scallops
3 slices reduced fat Swiss cheese
1/2 cup fat free cheddar
1 cup egg white
1/2 cup fat free half and half
salt and pepper
Place all items in a pie pan sprayed with non-stick cooking spray. Layer them in the order listed, then pour mixture of egg white, half and half and salt and pepper over the top. Bake at 400 for about a half hour, or until egg is cooked through.
I haven't tasted it yet because it's for tomorrow, but it sure smells good! I'll just heat it up in the morning at 350 for 10-15 minutes and it's good to go. I'll give you the taste test results tomorrow.
So, I guess three pounds is pretty good. I was listening to Cosmo Radio yesterday. ( I loves me some Cosmo Radio!) They were pointing out that even one pounds is the equivalent of four sticks of butter. . . on your thighs, butt, etc. So, I've lost 12 sticks of butter! When you put it that way, seems like a lot!
Think of all the butter Julia Child consumed in her lifetime! I wonder if Jillian Michaels eats butter?
